I dropped the hydration in my spelt #sourdough recipe from 75%, which yielded an extremely wet dough, to 56%
This is probably to dry, but I’ll up it by 5% points each dough until I arrive at the “optimum”

Almost no oven spring this time, the starter was bubbly, as was the dough. Crust and crumb texture as intended.

A little (50 ml) less water because spelt. Also, the last one was a little „blond“, so 30 min @ 250 C and 10 min @ 180 C
